Easy Vegan Ice-cream Cake!?

You be the judge…

1 can unsweetened coconut milk
2 boxes vegan ice-cream sandwiches (8 small bars in each box)
1 1/2 cups crumbled vegan brownies! (or 1c chopped Oreo Cookies)
1t stevia

  • Chill  the can of coconut milk overnight in the fridge.
  • Line a loaf pan with parchment paper, allow the paper to hang over both long sides.
  • Open the can of chilled coconut milk, and scoop out the thickened cream at the top of the can into a mixing bowl. Stop scooping when you see  clear liquid (about halfway down).
  • Whip the cream steadily for about 3-5 minutes, adding in the stevia.
  • In the bottom of the loaf pan arrange one box of  the sandwiches in a single layer, cutting them to fit as necessary. Spread half  of the whipped cream and top with half of the brownies. Repeat with the remaining sandwiches, whipped cream, and brownies (or cookies).
  • Cover and place in freezer for 3 Hours+.
  • Use the parchment paper to lift the cake out of the pan and transfer to a serving plate.

Vegan Pea Soup

Quick & Easy Pea Soup for Two

Cook Time: 10 Mins
Serves 2

  • 1 Can Peas (Drained)
  • 1 Medium Carrot (Peeled)
  • 2 Cups Vegetable Broth
  • 1/2 Cup Potato Flakes
  • 1/4 Cup Chopped Onion
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Liquid Smoke
  • 2 Cloves Garlic (Peeled)
  • Salt (To Taste)
  • Black Pepper (To Taste)

Add all ingredients into food processor, blend until smooth (may take several minutes depending on food processor- give processor breaks to not over heat the motor). Over Medium Heat, cook in sauce pan on stove for 10 Minutes stirring occasionally.

Optional: Replace liquid smoke with smoked paprika
